Not one mention of our indigenous ingredients. Hmm. Maybe the article just wasn't researched that well.

In fact Australia has an authentic cuisine and it is exciting, unique, innovative and its roots go back further than any other living culture anywhere on the planet. It is the fusion of those herbs, spices, fruits and other products which are only found on our island continent and which make our modern kitchen vibrant and interesting.

These ingredients include Lemon myrtle sprinkle, Wattleseed, Alpine pepper and Wild rosella, Paperbark Smoke oil and Yakajirri (a native Australian tomato in a seasoning).
