Organization is the key in Iowa. Polls really don't matter. I am a lifelong resident of Iowa and I am always amazed at the national media not understanding that or ignoring the fact. Romney has a statewide organization and should do well, normally. Rudy has little organization and it should be no surprise if he comes in third or fourth in Iowa. Huckabee's only hope is to secure the social/value conservatives and get their organization(s) work a victory for him. This is not impossible. Pat Robertson did well here with nothing but evangelical church organization. Huckabee could well take second place and has an outside chance of taking first. The mainstream media will then play up Huckabee as the "winner" if he "surprises" everyone. The end game is this: Huckabee is viewed as week in a national campaign. I think the media and the Democrats don't understand his draw beyond the evangelicals, but maybe more on that later.
