You can't turn back the clock and live in the past. The era which made the lower east side is ended. Foot traffic accounts for a majority of trade, convenience. The Carnegie Deli is where Jimmy Carter went for authentic deli, the Broadway crowd. This new location makes the restaurant a destination. Kosher consumers go out of their way for kosher products. A majority favor meat. This is not true of the general population. Gribenes is out, healthier in. If the Second Avenue Deli doesn't have kosher supervision, there are fewer and fewer Marjorie Morningstars likely to find it, unless they're getting their nails done or washing laundry on that street. With NYU in proximity, the Center for Jewish History not all that far away, kosher makes sense, and if they'll deliver, a larger public. If not, they'll own the real estate and can always offer tapas.

It's a business decision which should be made after careful market and demographic analysis.
