WASHINGTON WINES Walla Walla’s wines grab the spotlight as Washington’s Buty Winery is featured during a five-course meal at Compass restaurant. Chef John Fraser prepares dishes such as a chilled avocado soup, paired with a semillon/sauvignon blanc blend from 2004. WHERE’S THE BEEF? Gallagher’s Steak House will celebrate its inaugural Grand Festival of Beef with samplings of eight varieties of beef, including tenderloin, hanger steak, classic New York strip, and Angus beef, as well as various red wines.
