VITAL ORGANS A festival of concerts, lectures, and symposia commemorates the 25th anniversary of the death of Virgil Fox, one of the most popular organists of the past century. Performers include Hector Olivera (tomorrow, 8 p.m., Church of St. Paul the Apostle, 59th Street and Columbus Avenue, $25, $15 seniors and students) and Douglas Marshall (Saturday, 8 p.m., Church of St. Mary the Virgin, 145 W. 46th St., $25, $15 seniors and students).The final concert employs a digital organ that allows Fox to perform Bach posthumously (Monday, 1 p.m., Trinity Church, Broadway and Wall Street, free).
