MARKET DAY
Brasserie Les Halles, the bustling boite owned by Phillipe Lajaunie, recently expanded into an adjoining space next door and will now offer a wide selection of fresh produce, meats, dry goods, and prepared foods such as sauces, stocks, and specialty butters made by Les Halles cooks. The ingredients are the very same that the restaurant’s kitchen uses. They’re also the ingredients needed to make the recipes – such as coq au vin and onion soup – from the recently published “Les Halles Cookbook,” by Anthony Bourdain. Les Halles has long had a meat counter where steaks, chops, and pates could be taken out and cooked at home, but the additional space allows Mr. Lajaunie to offer a full market – a fitting development, as the name of the restaurant refers to the French term for an outdoor market.
